The BEST paella valenciana recipe! 🥘🥘

This was a challenging (in a fun way!) recipe to develop—here in Spain there’s so much controversy surrounding what is and what is not a paella! And despite the popular image of seafood paellas that come to mind when many people think of Spanish food, this meat-and-veggies recipe is the original, traditional version from Valencia.

So with so much debate surrounding paella, what makes this one the real deal? There are a few key elements that are crucial to an authentic paella valenciana:

✅ Short-grain, round Spanish rice (I use the Senia variety) that’s able to soak up tons of flavor
✅ Water (not stock!) as a liquid
✅ Chicken and either pork ribs or rabbit as the protein (rather than seafood)
✅ Simple Spanish spices—paprika and saffron—along with plenty of excellent quality olive oil
✅ A wide, shallow pan to allow the rice to cook in a single even layer, as well as get that perfectly crispy layer of socarrat on the bottom!
