Chicken & Bacon Tortellini, covered in a creamy and cheesy onion Alfredo sauce, with a crumble made of crushed pork rinds, and topped with more cheese. Feeds 2. $3.50. Recipe below.
Boil tortellini (7 min) while sauteing onions in a seasoned oil. Drain the tortellini, lower heat on the onions, and stir in a dash of cream, the cheese and the Alfredo sauce (store bought; $2.99). Preheat oven to 300°.
Toss the sauce and tortellini, and then place in an oven dish. Use as many pork rinds (aka dog-crack; excellent for training) as you like (I used half a small, store bought pack), crush in a separate bowl and coat the top in the pork rind crumble. Top as generously as you like with cheese (in this case, store brand shredded triple cheedar).
Into the oven in middle rack for 20 minutes, and then another 10 minutes on low broil.
Total carbs: 120 g
