We redid our bedroom to create a place that was organized, cohesive and relaxing after years of mismatched furniture and a lack of storage. West Elm Canada | Furniture made it so easy to create the space we wanted, including pops of the fun colour that we are used to in the rest of our home.

SWEET 🌽 CORN PASTA SALAD

Ingredients:
1 can black beans, drained and rinsed
2 cups frozen corn
1 avocado, diced
1 red onion, diced
4 radish, diced
1/2 bunch cilantro, minced
2 tbsp chipotle in adobo, minced
1/4 cup feta
1/2 box medium size pasta, cooked according to the package

Dressing:
1 cup mayo
1 lime, juiced
1/2 bunch cilantro, minced
2 garlic cloves, minced
1/2 tsp salt

Method:
1. Heat a cast iron over medium high heat, add 1 tbsp of oil and add the corn, cook until slightly charred all over. Around 8 minutes. Remove and set aside.
2. Make the dressing by combining everything in a bowl.
3. Cook the pasta according to the package and run under cold water to stop overcooking.
4. Add everything to a large bowl and mix to combine. Dig in or store in a Tupperware until ready to eat!
