Delicious Caulifower and seed salad. This salad packs a punch with its nutrient profile, it's a little bit of prep but so worth. it.
Caulifower, although pale in it's colour is rich in glucosinolates. It ihas a huge amount of antioxidants, especially the purple varieties.

Recipe:
You can aff mostly any nuts and seeds you like but thisis what i put in.
Mix together
Two cups of grated caulifower (Raw)
I can lentils drained and rinsed
1 cup cooked quinoa, i use a cooked packet from. the supermarket
1/4 cup dried carnberries
1/4 cup dried currants
1/2 cup roasrted almonds roughly chopped
1/2 cup walnuts rougly chopped
1/2 cup pepitas
1/2 cup sunflower seeds
1/4 cup sesame seeds
1 cup chopped flat leaf parsley
1 cup chopped corriander.
Cranberries on top are optional

Dressing:
1/3 cup olive oil
pich salt and pepper
1 tbs of maple syrup of honey
1/3 cup lemon juice

Mix all together and serve.
or refrigerate undressed and use over a couplr of days.
