Stay ahead of the Winter blues with this one. Garlic & honey, fermented together into an easy, keep-on-the-shelf mix that just sits quietly doing its thing. Over a few weeks the garlic mellows right out, the honey turns into this sweet, savoury, umami syrup that's good to have on hand. As a remedy; a spoonful of the honey or a clove or two of the garlic helps soothe a sore throat or nip a cold in the bud before it takes hold (my kind of prepping). Also makes for a healthy addition to dressings.

a quick pro tip for all you Pressure Canning people......I used to dab with a tea towel - Katherine's Kitchen's idea makes a lot more sense. Its certainly the middle of Canning season so get giggling people 😁
